Sweeteners: Sweetness Profile, Aftertaste and Synergy

Sweetness is more than intensity

Successful sugar reduction requires an understanding of how individual sweeteners behave and how they interact in blends. Consumer perception, process conditions, economics, marketing and nutrition all matter, but the first sensory questions are always the same: how sweet is it, when does the sweetness appear, how long does it last and what remains after swallowing?

Relative sweetness

Relative sweetness — also called sweetness potency or sweetness index — compares a sweetener with sucrose, whose sweetness is conventionally assigned a value of 1.

It is determined sensorially by comparing solutions at equivalent perceived sweetness. There is no single instrumental measurement that replaces human sensory assessment. The result can vary with concentration, pH, temperature and the presence of other taste-active ingredients, which is why evaluation in the actual product matrix is preferable.

Dosage

Sugar can be replaced partially or completely. An initial dosage may be estimated from the amount of sugar being replaced and the approximate relative sweetness of the chosen sweetener, but this is only a starting point. The final dosage should be optimized through sensory testing in the finished matrix.

Temporal sweetness profile

Sweeteners do not all behave like sucrose. A sweetness profile describes the onset, peak and decay of sweet taste. Some sweeteners appear more slowly, some persist longer, and some create a lingering tail that becomes more obvious after the product leaves the mouth.

This temporal behavior is one reason why blends can outperform a single sweetener.

Aftertaste

Many high-intensity sweeteners can produce secondary notes described as bitter, metallic, medicinal, menthol-like or licorice-like. The character and intensity depend on dosage and matrix.

Carefully designed blends can reduce undesirable notes by allowing the components to compensate for one another.

Synergy

Synergy occurs when sweeteners work better together than they do separately. It can be both quantitative and qualitative.

Quantitative synergy means that a blend delivers more perceived sweetness than would be expected from the arithmetic sum of its components, creating potential cost-in-use benefits.

Qualitative synergy improves the shape of the sweetness curve and can soften or mask unwanted aftertastes, producing a more sugar-like profile.

Flavor modification

Sweeteners can also influence aroma and taste perception beyond sweetness itself. Depending on the ingredient and matrix, they may strengthen certain flavor notes, suppress others or change the balance of fruit, vanilla, mint, acid and bitter components.
